FILLING – mixture between the layers of wedding cake. Mousse, ButterCream, Jam ,Ganache…

BUTTERCREAM – Creamy, textured icing made with sweet butter and sugar. Food coloring can be added

GANACHE – Sweet, creamy, chocolate mixture

Fondant – Rolled icing with the consistancy of dough, producing a porcelain like finish. Often used for draping and sculpting.

DRAGEES – edible sugar balls.

MARZIPAN – Paste made with ground Almonds. Also used for sculpting

SUGAR PASTE – Clay-like consistancy. Great for forming flowers, leaves, etc…
